Banana Oats Pancakes

Serves: 2 servings
Ingredients
  • 2 ripe bananas
  • 1 cup quick oats
  • 2 eggs
  • ½ cup low fat milk (or choice of milk)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
Instructions
  1. Using a food processor, pulse oats into fine flour consistency.
  2. Add milk, eggs, baking soda, bananas, vanilla extract and cinnamon into the finely quick oats and pulse until it combines and resembles a pancake consistency.
  3. Transfer into a measuring cup with a spout for easy pouring .
  4. Coat pan with cooking spray and add batter.
  5. Flip when you see air bubbles and continue to cook on the other side.
Notes
Each pancake will take about a minute to cook.
