Bacon and Garlic Fried Rice

Serves: 2 servings
- 3 cups of cooked rice
- 2 large eggs
- 6 strips of bacon
- 1 tsp of cooking oil
- 4 TBS of bacon fat
- 2 large cloves of garlic
- 1 green onion
- 2 TBS of chopped cilantro
- 3 TBS soy sauce
- 1 tsp fish sauce
- ¼ tsp salt
- ¼ tsp black pepper
- 4 ounces of ground turkey (optional)
- Cook 2 cups of rice in rice cooker. (This will yield 3 cups of cooked rice)
- While rice is cooking, cook 6 strips of bacon and cut into small pieces. Save the bacon fat drippings.
- Chop 2 large cloves of garlic and set aside.
- Chop the green onion and cilantro and set aside.
- Mix the eggs and scramble with 1 tsp of cooking oil and set aside.
- Cook the ground turkey and set aside.
- In a large sauce pan or wok, add 3 TBS of bacon fat and add in the chopped garlic.
- Add in the cooked ground turkey and stir.
- Add in the cooked rice and stir.
- Mix the soy sauce and fish sauce and add to the wok.
- Stir the ingredients in the wok.
- Add in the remaining 1 TBS of bacon fat and mix.
- Add ¼ tsp of salt and ¼ tsp of black pepper.
- Taste, if you need to add in an additional ¼ tsp of salt.
- Garnish with green onions and cilantro.
Taste if you need any additional salt.
If you decide to add in the ground turkey, add ¼ tsp of salt when cooking.
