*Save some pasta water to help loosen the noodles for the stir fry.
Lo Mein Stir fry:
2 TBS olive oil or any cooking oil
1 large clove garlic
2 green spring onions
Sauce for Stir fry:
2 TBS oyster sauce
1 TBS coconut aminos
Pasta Water
Instructions
Cut up the chicken breast or thigh and marinate the meat for 15 minutes with the oyster sauce, coconut aminos (or soy sauce), sesame oil, salt and cornstarch.
Wash the green spring onions and cut length wise.
Roughly chop the clove of garlic.
Boil water and season with salt and olive oil and cook the thin spaghetti noodles.
Drain and save some pasta water to help loosen the noodles when it's time to stir fry.
Heat olive oil (or cooking oil) and add the roughly chopped garlic for 30 seconds and then add the marinated chicken.
Stir and make sure the chicken is cooked through.
Add the green onions and stir.
Add in the cooked thin spaghetti noodles and add some pasta water to help loosen the noodles.
Add in the stir fry sauce of oyster sauce and coconut aminos and mix.
Taste if you need to add any more seasoning.
Notes
Optional: Add black pepper, Thai red peppers and hot chili oil.
