Khaub Piaj Noodle Soup

This is a very easy and simple Khaub Piaj (Kao Piak) noodle recipe. Traditionally you would boil a whole chicken but since we are using ground pork, the cooking time will be cut in half the time. Try this instant and easy Khaub Piaj noodle recipe.

Ingredients
  • 1 lbs. lean ground pork (chicken or turkey)
  • 1 stalk of lemon grass (cut into large pieces)
  • 1 knob of ginger, peeled
  • 3-4 cilantro root
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 - 10 cups water or chicken stock
  • 2 tsp chicken seasoning
  • 2-3 tsp salt (depending on how much water/chicken stock you use - start with one tsp and taste and add more to your liking)
  • 1 package of Khaub Piaj noodles
  • 3-4 green onions
  • 1 bunch of cilantro
  • 1 tsp soy sauce
  • 1 tsp fried garlic
  • 1 tsp fried onion
  • ⅛ tsp black pepper
  • ¼ tsp fried chili oil pepper
  • ¼ cup pork skins
Instructions
  1. Cook ground pork and break it up in a large pot
  2. Add 1 tsp salt and ½ tsp black pepper
  3. Once pork is cooked, add water or chicken stock
  4. As you wait for stock to boil, cut up green onions and cilantro
  5. When stock is boiling, add in chicken seasoning
  6. Add kappa noodles and gently stir from the bottom to make sure it doesn’t stick to the bottom of pot
  7. Add more salt to stock (1 tsp at a time until desired taste)
  8. Once noodle is cooked to your preference, turn off strove and serve.
  9. Add green onions, cilantro, soy sauce, fried garlic, fried onions, fried chili oil pepper, black pepper and pork skins to garnish and mix.
Notes
Do not eat the lemon grass, ginger and cilantro root.
