Fried Rice

My little nieces ask me to make fried rice on a weekly basis. There’s no reason to call for take-out Chinese when you can make it at home. The recipe can cater to any picky eater. You can customize it and make it to your liking. Your family and friends will love this recipe.

Serves: 2 servings
Ingredients
  • 3 cups cooked white rice (cold)
  • 4 ounce of ground pork (or your choice of protein)
  • ½ tsp. salt (separate ¼ tsp)
  • ⅛ tsp black pepper
  • 2 tsp mushroom dark soy sauce or dark soy sauce
  • 2 Tbsp. oyster sauce
  • 2 Tbsp. light soy sauce
  • 1 Tbsp. fish sauce
  • 1 tsp sesame oil
  • 1 Tbsp. vegetable oil
  • 2 eggs
  • ⅓ cup frozen mix vegetables
  • 2 cloves of garlic, minced
  • 1 tsp ginger, minced
  • 1 small onion, chopped
  • 2 green onions, chopped
  • Cooking spray oil
Instructions
  1. Combine dark soy sauce, oyster sauce, soy sauce and sesame oil in a bowl.
  2. Mince garlic and ginger.
  3. Chop small onion and green onions.
  4. Place frozen vegetable in a bowl.
  5. Heat wok or pan on medium high with cooking spray oil and crack two eggs and scramble. Cook until fully cook and remove from wok/pan and set aside.
  6. In the same wok/pan, spray cooking oil into wok/pan and cook ground pork or protein of choice and season with (1/4 tsp) salt and pepper. Break up the ground pork and as you mix. Cook until fully cooked. Remove from wok/pan.
  7. Use vegetable oil in the same wok/pan to cook your aromatics; garlic, ginger. Add chopped onion and mix until translucent. Add frozen vegetables and mix all vegetables and aromatics. Push to one side of wok/pan.
  8. Add cold white rice and break it up with a spoon or spatula. I switch between the two. The heat from the wok/pan will help break up the cold lumpy rice. Add remaining ¼ tsp salt.
  9. Add the cooked ground pork and mix.
  10. Add in sauce and mix.
  11. Turn off heat and add in scramble eggs and mix.
  12. Add in chopped green onions and serve.
