Ginger Christmas Cookie Truffles

If you enjoyed my Lemon Christmas Cookie Truffles, then you’ll love my Ginger Christmas Cookie Truffles.  It has the warm spices of the winter season and if Christmas could taste like a cookie it would have to be a ginger cookie. This is a fun dessert project for the kids to help.  It can’t get any easier.  All you need is your favorite ginger cookies, cream cheese frosting, milk chocolate and Christmas sprinkles.  Five if you want to be extra fancy and add pure vanilla extract.

I love Stauffer’s Ginger Snaps and found them at Cost Plus World Market.  Place the entire bag into your food processor and crush them until they turn into a sand-like appearance.  In a stand mixer take your favorite store bought cream cheese, mine is Betty Crocker’s cream cheese frosting and mix it until it has a whipped texture.  You will only need 1/4 cup otherwise it will be too sweet.  You can also add in pure vanilla extract with the cream cheese frosting.  Then add in your crushed ginger cookies and mix until it comes together into a ball.  If the mixture isn’t coming together add in a little more cream cheese frosting.

I used a mini ice cream scooper to portion out the cookie balls.  They provide the best bite size truffles.  Roll out each one with your hands until you get a circular ball shape and place them in the freezer for 15 minutes.  Melt your milk chocolate during this time.  I used chocolate almond bark and they turned out delicious!  You can also use chocolate candy melts.  Dip each ball into the melted milk chocolate and add some Christmas sprinkles on top.  Your friends and family will love these Ginger Christmas Cookie Truffles!  Enjoy!

Serves: 22-24 ginger cookie truffles
Ingredients
  • 14 ounce ginger cookies
  • ¼ cup cream cheese frosting
  • 1 tsp pure vanilla extract
  • milk chocolate (chocolate candy melts or chocolate almond bark)
  • Christmas sprinkles
Instructions
  1. Crush ginger cookies in a food processor.
  2. Mix cream cheese in a stand mixer and add pure vanilla extract.
  3. Add crushed ginger cookies and mix until it gathers into a ball.
  4. Scoop mixture into bite size balls and roll with hands until they take shape.
  5. Freeze cookie balls for 15 minutes.
  6. Melt chocolate.
  7. Dip cookies into melted chocolate and add Christmas sprinkles.
  8. Wait for chocolate to harden and enjoy!
