Lemon Christmas Cookie Truffles

These Lemon Christmas Cookie Truffles are super easy, simple and delicious!  They require no baking which is even better.  All you need is your favorite store bought cookies and cream cheese frosting and white chocolate for the coating.  If you want to be a little more fancy just add in some additional  flavors and sprinkles on top.  I’ve seen other people make Christmas Cookie Truffles with cream cheese and powder sugar but why fuss with all of that when you can use a store bought cream cheese frosting!

My favorite lemon cookies are Stauffer’s lemon snaps.  They are delicious and has the perfect lemon flavor to make these cookie truffles.  I bought mine at Cost Plus World Market.  I only wish I bought a second bag because these truffles are delectable! I got 22 cookie truffles from the 14 ounce bag.  I used a mini ice cream scooper and find that they make the best bite size truffles.

I placed the entire bag into my food processor and crushed them until the mixture turned into a sand-like appearance.  If you don’t have a food processor, place your cookies in a ziplock bag and use a rolling pin and crush them.  In a stand mixer or electric mixer, take your favorite store bought cream cheese frosting, mine is Betty Crocker’s cream cheese frosting and mix it with a tsp of lemon extract and then add in your crushed lemon cookies and let it mix until it comes together into a ball.  You will only need 1/4 cup of the cream cheese frosting.  Don’t use the whole can otherwise they will turn out too sweet.  If your mixture is not coming together add in more frosting.

Once your mixtures comes together.  Take a mini ice cream scooper and portion out the cookie balls.  Then roll each one with your hands until you get a circular ball shape.  Then place them in the freezer for 15 minutes.  During that time melt your favorite chocolate.  I used Lindt white chocolate but next time, I’m going to opt for white candy melts or even vanilla almond bark so they can set up easier.  Dip each cookie ball into the white chocolate and add some Christmas sprinkles on top.  These are the perfect gifts for friends and family.  Enjoy!

Ingredients
  • 14 ounce bag of lemon cookies
  • ¼ cup cream cheese frosting
  • 1 tsp lemon extract
  • 10 -12 ounce of white chocolate
  • Christmas sprinkles
Instructions
  1. Crush lemon cookies until they have a sand-like appearance
  2. Mix cream cheese frosting in stand mixer and add lemon extract
  3. Add crushed lemon cookies and mix until it comes into a ball
  4. Scoop mixture into bite size balls
  5. Freeze cookie balls for 15 minutes
  6. Melt white chocolate
  7. Dip cookie balls into white chocolate and add Christmas sprinkles
  8. Wait for white chocolate to harden and enjoy!
