  • 1 cup water
  • 1 Tbsp honey
  • 1 cup Walnuts
Shrimp Batter:
  • 1 Lbs. Devein and Peeled Shrimp
  • 1 Egg
  • 1 cup Glutinous Rice Flour or Corn Starch
  • ½ tsp Salt (depending on taste)
  • ¼ tsp Black Pepper
Sauce:
  • 3 Tbsp Mayo
  • 2 Tbsp Sweetened Condense Milk
  • 2 Tbsp Honey
  • ½ small lime or lemon

  • Garnish with spring onions
  • Vegetable Oil for deep frying the shrimp batter
Instructions
  1. Pour sugar, water, honey and walnuts into a sauce pan on low to low-medium heat and let it simmer for no more than 10 minutes. Use a slotted spoon and remove the walnut unto parchment or wax paper and let them cool.
  2. Make sauce by mixing the mayo, honey, condense milk and lime juice and cover and leave in fridge until you are ready to use.
  3. Mix the egg into the devein and peeled shrimp. Add salt and pepper to taste. Cover and leave it in the fridge for 10 minutes.
  4. Prepare your flour station. Add glutinous rice flour into a dish and flour your shrimp egg mixture and shake off any excess flour and put it in another clean dish until you are ready to deep fry.
  5. Deep fry your flour egg shrimp battered in at temperature 340-350 degree fryer and deep fry 3-4 minutes until golden brown.
  6. Cool fried shrimp unto parchment paper or paper towel.
  7. Take out your sauce out of the fridge for 10 minutes before you mix your deep fried shrimp.
  8. Mix the sauce until smooth and gently toss in the deep fried shrimp and honey walnuts.
  9. Garnish with spring green onions and serve right away otherwise your shrimp will get soggy and lose its crispiness and bounciness.
