Bacon and Garlic Fried Rice

I’ve been craving bacon and garlic fried rice and decided to share my easy and simple recipe.  I use basic ingredients so it’s not complicated to make.  If you’re looking for an easy and delicious recipe, you’ll love my bacon and garlic fried rice.

I did not have any left over rice from the day before so I’m using fresh cooked rice.  Two cups of uncooked rice will make 3 cups of fresh cooked rice.  This recipe will make 2 servings.  I used less water when making the rice in my rice cooker so there would be less moisture to help prevent the rice from being too sticky and mushy.  It’s best to use left over cold cooked rice if possible.

I don’t like to mix the uncooked eggs straight into the fried rice instead I like to scramble the eggs separately.  Cook 6 pieces of bacon and save the bacon fat drippings to cook the chopped garlic.  This will help infuse and provide more aromatic to your fried rice.  If you don’t have any bacon, feel free to use bacon bits instead.  That will cut your cooking time.  I also used ground turkey for this recipe to give it more protein but it’s optional and not necessary.  I didn’t have any frozen mixed vegetables on hand so I used fresh green onions and cilantro.  To make the sauce add soy sauce and fish sauce.  The bacon and garlic fried fried comes together very quickly once you have all your ingredients prepared.  I hope you enjoy my easy and delicious bacon and garlic fried rice.


Bacon and Garlic Fried Rice

Ingredients
  • 3 cups of cooked rice
  • 2 large eggs
  • 6 strips of bacon
  • 1 tsp of cooking oil
  • 4 TBS of bacon fat
  • 2 large cloves of garlic
  • 1 green onion
  • 2 TBS of chopped cilantro
  • 3 TBS soy sauce
  • 1 tsp fish sauce
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 4 ounces of ground turkey (optional)
Instructions
  1. Cook 2 cups of rice in rice cooker. (This will yield 3 cups of cooked rice)
  2. While rice is cooking, cook 6 strips of bacon and cut into small pieces. Save the bacon fat drippings.
  3. Chop 2 large cloves of garlic and set aside.
  4. Chop the green onion and cilantro and set aside.
  5. Mix the eggs and scramble with 1 tsp of cooking oil and set aside.
  6. Cook the ground turkey and set aside.
  7. In a large sauce pan or wok, add 3 TBS of bacon fat and add in the chopped garlic.
  8. Add in the cooked ground turkey and stir.
  9. Add in the cooked rice and stir.
  10. Mix the soy sauce and fish sauce and add to the wok.
  11. Stir the ingredients in the wok.
  12. Add in the remaining 1 TBS of bacon fat and mix.
  13. Add ¼ tsp of salt and ¼ tsp of black pepper.
  14. Taste, if you need to add in an additional ¼ tsp of salt.
  15. Garnish with green onions and cilantro.
Notes
Taste if you need any additional salt.
If you decide to add in the ground turkey, add ¼ tsp of salt when cooking.
