Banana Oats Pancakes

I love breakfast any time of the day!  Pancakes are one of my favorite breakfast meals, however it’s not usually friendly to my waist line.  I created a healthier version of my banana oats pancakes using quick oats.  If you’re like me, every year I tell myself I’m going to eat healthier and buy a massive canister of quick oats knowing full well I’m not an oatmeal eater.  It sits on my shelf and goes to waste.  Not this year!  My banana oats pancakes turned me into an oats fan!  I can now say I love quick oats.  If you’re not an oats fan you must try my banana oats pancakes recipe.  It comes together in no time.

It’s super quick, easy and delicious!  I used my trusty food processor to finely pulse my quick oats into a flour like consistency.  I added baking soda to create a fluffy rise to my pancakes and eggs to provide additional protein plus it helps bind all the ingredients together.  I’m not adding any sugar into this recipe so use ripe bananas.  The riper the bananas the sweeter the pancakes.  For added flavor, I added a dash of cinnamon and vanilla extract.  I ran out of vanilla extract so I used vanilla bean paste and it was glorious!

You can even make the batter overnight and cook it in the morning.  For some reason when the batter is cold, the pancakes are fluffier.  I use Walden pancake syrup to top my banana oats pancakes but feel free to use maple syrup, peanut butter, chocolate or berry syrup!  It’s reminds me of banana bread and hits the sweet cravings.

Serves: 2 servings
Ingredients
  • 2 ripe bananas
  • 1 cup quick oats
  • 2 eggs
  • ½ cup low fat milk (or choice of milk)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
Instructions
  1. Using a food processor, pulse oats into fine flour consistency.
  2. Add milk, eggs, baking soda, bananas, vanilla extract and cinnamon into the finely quick oats and pulse until it combines and resembles a pancake consistency.
  3. Transfer into a measuring cup with a spout for easy pouring .
  4. Coat pan with cooking spray and add batter.
  5. Flip when you see air bubbles and continue to cook on the other side.
Notes
Each pancake will take about a minute to cook.
