Keto Cheddar Biscuits

Happy Labor Day!  I hope you’re enjoying your family and friends eating and laughing over this long holiday weekend.  I’ve been craving cheddar biscuits and wanted to stay on track with my new way of eating on low carb and keto.  I came up with the most delicious keto cheddar biscuits.  It’s a wonderful companion with ribs, sausage or bacon.  It’s universal and accompanies well with any main dish.

This recipe requires almond flour, cold salted butter, eggs, sour cream, baking powder, garlic powder, onion powder and sharp cheddar cheese.  It’s super easy and whips up in a jiffy.  In one bowl, add all the wet ingredients, eggs, sour cream and shredded sharp cheddar cheese and mix.  In a separate bowl add the dry ingredients, almond flour, baking powder, garlic and onion powder and give it a quick mix.  Add the cold salted butter into the dry ingredients and use a pastry blender to cut the butter into small pieces.  Mix the wet and dry ingredients together being careful not to over mix.  Take a spoonful of mixture and place it in a muffin pan.  Make sure to butter your muffin pan.  This recipe will make 12 biscuits.  Bake at 400 degrees Fahrenheit and you’re done.  They are delicious!  Your non-keto family will enjoy them as well.  Enjoy!

Serves: 12 biscuits
Ingredients
  • 1¼ cup almond flour
  • 1 TBS baking powder
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 4 TBS cold salted butter
  • 2 eggs
  • ⅓ cup sour cream
  • ⅓ cup shredded sharp cheddar cheese
Instructions
  1. Add eggs, sour cream and sharp cheddar cheese in a bowl and mix until combines.
  2. In a separate bowl add almond flour, baking powder, garlic and onion powder and mix.
  3. Add the cold salted butter to the dry ingredients and use a pastry blender to mix. This will help cut up the butter into small pieces.
  4. Add the egg mixture into dry ingredients and mix.
  5. Butter muffin tray with butter or cooking spray.
  6. Use a spoon and drop a spoonful of mixture into a 12 muffin pan.
  7. Bake at 400 degrees Fahrenheit for 15 minutes depending on oven.
Notes
If you use unsalted butter, add ¼ tsp salt to dry ingredients.
Make sure not to over mix wet and dry ingredients otherwise you will get rocks versus soft, buttery delicious biscuits.
